Delicate yet complex, our 2021 Pinot Noir entices with aromas of raspberry, black cherry, and dried rose petals, layered with hints of sandalwood and leather. Juicy red fruit flavors meet sarsaparilla, chocolate, and earthy undertones, all balanced by a subtle mineral salinity. Aged in French oak for 12 months, this elegant wine is a perfect match for duck confit, mushroom risotto, or your favorite pizza.
Aromas of raspberry, black cherry, dried rose petals, beetroot, sandalwood and leather. On the palate, beautiful red fruit – black cherry and raspberry are complemented by notes of sarsaparilla, chocolate and earthy notes. There’s a nice mineral salinity in the background.
This Pinot Noir was harvested Oct. 7, 2021 and left for a 3 day cold soak before beginning fermentation. Aged in French oak barrels and puncheons (mostly older, neutral barrels) for 12 months before deciding on the best barrels for this blend.
