Juicy red fruit flavors meet sarsaparilla, chocolate, and earthy undertones, all balanced by a subtle mineral salinity. Aged in French oak for 12 months, this elegant wine is a perfect match for duck confit, mushroom risotto, or your favorite pizza.
Aromas of raspberry, black cherry, dried rose petals, beetroot, sandalwood and leather. On the palate, beautiful red fruit – black cherry and raspberry are complemented by notes of sarsaparilla, chocolate and earthy notes. There’s a nice mineral salinity in the background.
This Pinot Noir was harvested Oct. 7, 2021 and left for a 3 day cold soak before beginning fermentation. Aged in French oak barrels and puncheons (mostly older, neutral barrels) for 12 months before deciding on the best barrels for this blend.
